Atelier Zébulon Perron, a firm renowned for its distinct interior design services for the commercial sector, proudly introduces Hav & Mar, a multicultural culinary destination located in the Starrett-Lehigh building in New York City’s renowned arts district of Chelsea. Hav & Mar marks the second collaboration between Atelier Zébulon Perron and Marcus Samuelsson, the Ethiopian-born, Swedish-raised world-renowned chef who has honed his skills in New York City’s eclectic culinary scene.

With a diverse African, Scandinavian, and American background, Samuelsson envisioned a restaurant that would strike a beautiful balance between all of his cultural influences. ‘Hav’ means ‘Sea’ in Swedish, and ‘Mar’ means ‘Honey’ in Ethiopia’s Amharic language, and Hav & Mar has delivered on its promise of a globally-inspired menu of festive and flavorful creations since opening its doors in late 2022.

再度携手,共塑愿景Renewing acquaintances
在蒙特利尔四季酒店的高端Marcus餐厅项目中,Samuelsson曾与Atelier Zébulon Perron合作,此次他再次邀请该事务所,共同实现其最新的美食愿景。Samuelsson的每一个餐饮项目都源于一个全新的概念,Hav & Mar正是这一创作路径的延续。这间餐厅是他毕生经历的凝结,设计任务则聚焦于营造一种超越传统餐饮体验、能够激发社交互动的空间氛围。
Having previously collaborated with Atelier Zébulon Perron on the design of the high-end Marcus Restaurant at the Four Seasons Hotel in Montreal, Samuelsson called upon the firm once again to help design his latest culinary vision. Each new Samuelsson project is driven by a new concept, and Hav & Mar is a continuation of that trend. The restaurant is a culmination of Samuelsson’s life’s work, and the design challenge presented to Atelier Zébulon Perron focused on the creation of an ambiance that promotes social interactions that transcend the typical restaurant experience.

Atelier Zébulon Perron has gained notoriety for its creative approach to designing spectacular spaces within unusual floorplans, and the previous experience of Marcus Restaurant had instilled the collaborative relationship with mutual appreciation for that ability. Hav & Mar once again called upon the firm’s creative thinking to address Samuelsson’s newest vision.

温暖包裹下的社交体验The warm embrace of comfortable design
面对这处曾为工业用途的空间,Atelier Zébulon Perron以温暖的介入方式展开设计,选择胶合板作为构建Hav & Mar独特气质的基础材料。胶合板具有多样的表现力,贯穿于整个设计之中,应用于墙面和分隔构件,并用于支撑照明装置的结构组合。此外,Hav & Mar的私密卡座围合结构也采用了胶合板打造,赋予其独特的质感与形式。
In approaching what was previously an industrial space, Atelier Zébulon Perron began its intervention with an injection of warmth, choosing plywood as a material base for Hav & Mar’s unique character. With a multitude of possibilities, plywood became an important material throughout the design, applied to walls and boundaries, and used to build assemblies for harnessing lighting fixtures. Plywood was also used for the unique framework of Hav & Mar’s private booth enclosure.

在材质选择方面,设计采用了“提升感”的元素,同时以高规格吊顶统一整体空间,营造一个包容多元、人人皆可舒适停留的环境。室内陈设包括Atelier Zébulon Perron专为本项目设计的定制家具,也融合了质朴亲切的复古元素,以及与灯具品牌Lambert & Fils合作设计的装饰性照明。
Materials for the design included ‘elevated’ choices, but the project embraced a high-end ceiling to ensure a balanced and inclusive product where people from all walks of life would come and feel comfortable. Hav & Mar’s interior includes customized furnishings designed by Atelier Zébulon Perron, as well as some down-to-earth vintage elements, and decorative lighting designed in collaboration with Lambert & Fils.

Every piece contributes to the narrative of an international, multicultural life that is referenced in Hav & Mar’s earthy tones of browns and honey, contrasting with light marbles, including a teal bar top. Plush velvets, rich walnut, and other hardwoods juxtapose with raw stucco and concrete, paying tribute to the building’s industrial roots.

功能与流动的交汇Functional flow
Hav & Mar餐厅采用开放式厨房的设计理念,进一步强化了空间中的“流动”与“互动”。主吧台正对厨房设置,成为视觉和社交的核心。为了进一步提升平面布局的效率,Atelier Zébulon Perron在吧台与厨房之间巧妙嵌入一处独立卡座空间,原本可能被视为“最差位置”的角落因此被转化为最受欢迎的座位之一。
Hav & Mar’s open kitchen concept further contributes to the concept of flow and interaction, with the main bar prominently positioned directly in front of it. To further maximize floorplan efficiency, Atelier Zébulon Perron created a private booth as an articulated sub-space just off of the bar and kitchen area, essentially converting what might otherwise be the worst seat in the house into one of the most coveted seating options.

主吧台自身也拥有鲜明的存在感,其上方悬挂着一盏颇具“海洋生物”气息的大型灯具,造型异想天开、引人好奇。这件装置不仅是视觉焦点,也具备实际功能——它如同一个“穹顶”将空间尺度收束至贴近人感的尺度。整体设计注重垂直维度的组织,通过从天花板、地面到墙体各处的元素布置形成丰富的空间层次。每个元素均通过定制灯具进行艺术化照明,这些灯具既是雕塑性构件,也是各种光影氛围的发光载体。
Hav & Mar’s main bar has a special presence, denoted by a large, sea-creature-esque lighting fixture positioned directly above it. Incongruous and curious, the fixture also serves a functional purpose by acting as a canopy that grounds the area to a human scale. The overall design plays with verticality, with a variety of strategically placed elements emerging from the ceiling, floor, and walls. Each of those elements is creatively illuminated by custom-designed lighting fixtures that serve as both sculptural elements and backlights of an eclectic mix of glowing spaces.
